Monster Sausage Omelette


5 eggs
1/3 C milk
2 1/2 C cooked minced sausage
1 C Shredded Cheese

Cook sausage until done, then mince into little bits.  Then mix eggs and milk together, beat and put in to a large frying pan.  Cook until bottom is lightly cooked.  Then add sausage and cheese.  Then put in oven at 350 F until done or 10 minutes.

Lunch Pinwheel Sandwiches














1 Flour Tortilla
2 Lettuce Leafs
2 pieces of whatever lunch meat you desire (ham, turkey, etc.)
1 sliced tomato
Mayo if desired
Mustard if desired

Place the tortilla on the counter.  Then pull your chosen lunch meat and place once slice on each side overlaying each over about half way over the tortilla.  Then once you have that in place, spread mayo over the tortilla and lunch meat, and then spread the mustard as well.  Place 4 thinly sliced tomatoes vertically across in middle of the sandwich.  Then place the lettuce leaves across horizontally on top of the tomatoes.  Then once you have all that completed, slowly roll up the tortilla with the items in it, into a tight burrito shape.  Then once you have that shape, cut the  tortilla sandwich in small slices, and you have your "Lunch Pinwheel Sandwiches".

Yummy Surprises

Recently my husband, the Chef, and I, the Sous Chef, decided to try to make this delicious breakfast dish.  It’s basically an extra fluffy pancake with fruit filling inside.  It turned out well, and yummy.

Peruvian Arroz con Leche

3 C water
1 stick cinnamon
1 piece of orange peel
Pinch of salt
1 C rice, uncooked
1 12-oz can evaporated whole milk
1/2 14-oz can sweetened condensed milk
1/2 Tbsp vanilla extract
Cinnamon for decoration

In a saucepan, combine water, cinnamon stick, orange peel, and salt. When the water starts to boil, ...stir in the rice and cover the pot with a lid. Cook on medium-low heat until the water has been absorbed. Add the milks and stir continuously with a wooden spoon until mixture gets thick. Remove from heat and add vanilla. Transfer the rice dessert to a bowl or small souffle cups, and sprinkle with cinnamon. It can be served hot, warm, or cold.

Strawberry Banana Split

1 banana
3 scoops of Hagendaz vanilla ice cream
1 and a 1/2 cups Geradeli chocolate chips
5 to 10 strawberries according to preference
1 to 2 Tbsp sugar according to preference
First, four hours ahead of time, clean and cut the strawberries into small chunks. Place strawberries in a bowl, add sugar. Set for 4 hours in the refrigerator covered.

Second, cut the banana 4 times length wise and then cut in half. Arrange in bowl. Take chocolate chips, place in microwave safe container. Put in microwave and heat for 40 seconds at 50 % power or until melted.

Completely emerge banana slices in chocolate. Wait until the chocolate hardens before adding other ingredients. Scoop 3 balls of ice cream and place on top of banana slices. Pour strawberries on top of ice cream.

And enjoy and eat!!!

Breakfast Pizza

1 Pillsbury pizza dough
1  package of country white gravy
1 package of Jimmy Dean pork maple sausage
4 Eggs
5-6 pieces of cooked bacon
2 cups shredded Colby Jack cheese


Roll pizza dough out onto pizza pan.  Follow directions on back of Gravy mix to create. Then cook the pizza dough for about 5 minutes in oven at 350 F.  Then take out of oven, spread gravy over pizza dough.  Scramble eggs until done. Then add on pizza evenly, add cooked bacon and cheese.  Spread ingredients evenly through pizza, you may add different levels with the ingredients.  Then put pizza back into oven at 350 F, and cook for 15-18 minutes.

Italian Meatloaf


1 lb Sweet Italian Sausage
1 lb Ground Beef
1 lb shredded Mozarella
1 cup Sun-dried tomatoes in oil - chopped
1 cup Marinated artichoke hearts - chopped coarsely
1 onion - diced coarsely
1 1/2 Tbsp garlic
1 cup chopped fresh basil
2 cups fresh bread crumbs - Artisan Brad
3 eggs
Mix all ingredients together. Then form into loaf 4 inches by 12 inches
Bake 350 degrees F. Cook 1 hour.

Sauce to cover meatloaf:
4 tomatoes
1 onion
5 garlic cloves
Pinch of Salt
1/2 tsp Red pepper flakes
1 Tbsp fresh rosemary

Cut the 4 tomatoes in 1/2 . Peel the onion and cut into thin slices, and also cut the cloves of garlic. Place in a food processor to process more thoroughly until liquid form. Put in a sheet pan with the oven either on broil or if you have a broiler put in that, and set it in there for 5 minutes, it should start to blister when it is complete. Then put in to bowl, add salt, red pepper flakes and rosemary to mixture, and stir until thoroughly mixed together. Add sauce to the top of the meatloaf when serving.

Kool-Aid Play Dough

1 pkg. dry kool-aid
1-1/4 c. flour
1/4 c. salt

Mix together in a bowl and make a well in the middle. Pour in:
1 T. vegetable oil
1 c. boiling water
Knead well and let cool.

Enjoy!

Scotcheroos












1 cup light corn syrup
1 cup sugar
1 cup peanut butter
6 cups rice krispies cereal or 6 cups cocoa rice krispies cereal
1 package [6 oz., 1 cup] semi-sweet chocolate morsels
1 cup butterscotch chips

1. Place corn syrup and sugar into 3-quart sauce pan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil.  Remove from heat. Stir in peanut butter.  Mix well. Add cocoa rice krispies cereal.  Stir until well coated. Press mixture into 13x9x2-inch pan coated with cooking spray.  Set aside.

2. Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm.  Cut into  2x1-inch bars when cool.

Egg Salad Sandwich

4 Large Eggs
1/4 tsp Salt
1/4 tsp Pepper
2 Tbsp Mayo 

1/2 tsp. mustard regular
1 tsp. dill pickle relish & some juice gives zing flavor
4 pieces of bread
 

Boil Eggs for 20 minutes.   Unpeel shell, then smash white and hard yolk on plate.  Add mayo, mustard, relish, and dill pickle juice as needed to taste.  Then put mixture on bread for sandwiches. 

Preparation Time:  25-30 minutes
